The Winter vibe is on… the wait time is over. “Carrot pudding” or “Gajar ka Halwa” is considered a favorite dish of Indians. It is very tasty. It is also eaten as a dessert in many homes in India. Gajar ka halwa is made with fresh juicy red carrots, milk, sugar & khoya. My Grandmom used to make gajar ka halwa every winter .this is also a very popular dessert in every Indian specialty restaurant menu in winter menu. Wedding season is on and this delicacy is the beauty of every buffet menu. According to dietician carrot is a good source of Fibers, potassium, Iron, Calcium. it is very good for our health. Today I am going to share a simple homemade recipe of gajar ka halwa.
Top Tips:-
*Red carrots are the best for making this delicacy.
*If you don’t have a food processor you can grate it with the help of a hand grater.
*Grate the carrots in a medium thickness for the right consistency.
*Need to stir at regular intervals.
*You can make a big batch of halwa & refrigerate it, consume within a month.
Thaw it before reheating it.
Steps to make gajar ka halwa: —
Step 1:- Wash 500 gms of fresh red carrots in running water. peel & grate it in medium size with the help of a hand grater or food processor.
Step 2:- Pour 2 big cups of milk into a thick pan & begin to heat on medium flame.
Step 3:-Add grated carrots to hot milk, stir & cook it on medium flame.
Step 4:-Stir it regularly to avoid burning at the bottom. if you have a heavy bottom pan, you don’t need to stir it very often.
Step 5:-Cook it on medium flame until milk completely evaporates.
Step 6:-Here halwa will start getting thick consistency. Now add a half cup of sugar and mix it well.
Step 7:-After stirring for some time halwa turns gooey. Add 1 tablespoon of desi ghee when moisture is half evaporated. again stir it well.
Step 8:-Keep stirring from time to time to get a thick consistency. Add half a teaspoon of cardamom powder & mix it well.
your mouthwatering gajar ka halwa is ready to serve.
Step 9:- take a medium-size soup bowl put the desired amount of hot gajar ka halwa & garnish with Almond flakes, raisins, sliced pistachio & khoya (optional).
